A luxurious, creamy vegan pasta sauce made with roasted butternut squash, perfect for elevating weeknight dinners.
Ingredients

- 1 medium Butternut Squash, peeled and cubed
- 2 tablespoons Olive Oil
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 cup Vegetable Broth
- 3 tablespoons Nutritional Yeast
- 1 tablespoon Lemon Juice
- Salt & Pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Roast the butternut squash on a baking sheet with olive oil, salt, and pepper for 25-30 minutes.
- Sauté the onion in olive oil over medium heat until translucent, then add garlic.
- Blend roasted squash, sautéed onion, garlic, vegetable broth, nutritional yeast, and lemon juice until smooth.
- Heat the blended sauce on low for about 5 minutes, stirring frequently.
- Serve over your favorite pasta and garnish as desired.
Notes
This sauce can be made ahead of time and stored in an airtight container. It can be thinned with reserved pasta water if too thick.
