Ingredients

  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn kernels, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 12 limes, juiced
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper, to taste

Instructions

  1. Prep your ingredients: Rinse and drain the beans and corn. Chop tomatoes, bell peppers, onion, and cilantro.
  2. Mix it up in a large bowl: Combine beans, corn, tomatoes, bell pepper, avocado, onion, and cilantro in a bowl.
  3. Prepare the dressing: Whisk olive oil, lime juice, garlic powder, chili powder, salt, and pepper in a small bowl.
  4. Combine everything: Pour dressing over the mixture and toss gently to coat.
  5. Let it chill: Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Taste before serving and adjust seasonings as needed.
  7. Serve: Enjoy with tortilla chips.
