  • 1 jalapeño, seeds removed and finely chopped
  • ½ cup fresh cilantro, chopped
  • The juice of 2 limes, freshly squeezed
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Start by washing your vegetables. Rinse the black beans and corn under cold water. Halve the cherry tomatoes, chop the bell pepper, red onion, jalapeño, and cilantro.
  2. Mix the base: In a large mixing bowl, combine the black beans, corn, cherry tomatoes, bell pepper, red onion, and jalapeño. Use a spatula and fold everything gently.
  3. Add the flavor: Squeeze the juice of the limes over the mixture and drizzle on the olive oil. Sprinkle with salt and pepper.
