- 1 Red Bell Pepper, diced
- 1 small Red Onion, finely chopped
- 2 medium Tomatoes, diced
- 1 large Avocado, diced
- 1 small Jalapeño, finely chopped
- 1/4 cup Cilantro, chopped
- Juice of 1 Lime
- 2 tablespoons Olive Oil
- Salt and Pepper, to taste
Instructions
- Prepare Your Ingredients by gathering and chopping them as needed.
- Combine the black beans, corn, red bell pepper, and tomatoes in a large mixing bowl.
- Add the jalapeño, red onion, and cilantro; toss to combine.
- Dress the salad with lime juice, olive oil, salt, and pepper. Toss gently.
- Add the diced avocado last, folding it into the mixture.
- Let the Cowboy Caviar chill in the fridge for at least 30 minutes before serving.
Notes
