Description

Ingredients

  • 1 can Black Beans, drained and rinsed
  • 1 cup Corn, fresh or canned
  • 1 Red Bell Pepper, diced
  • 1 small Red Onion, finely chopped
  • 2 medium Tomatoes, diced
  • 1 large Avocado, diced
  • 1 small Jalapeño, finely chopped
  • 1/4 cup Cilantro, chopped
  • Juice of 1 Lime
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Prepare Your Ingredients by gathering and chopping them as needed.
  2. Combine the black beans, corn, red bell pepper, and tomatoes in a large mixing bowl.
  3. Add the jalapeño, red onion, and cilantro; toss to combine.
  4. Dress the salad with lime juice, olive oil, salt, and pepper. Toss gently.
  5. Add the diced avocado last, folding it into the mixture.
  6. Let the Cowboy Caviar chill in the fridge for at least 30 minutes before serving.

Notes

Best served with tortilla chips or as a topping for grilled chicken or fish. Add avocado right before serving to prevent browning.
