  • 12 medium Tomatoes, diced
  • 12 ripe Avocados, diced
  • 1/2 cup Cilantro, chopped
  • 12 Limes, juiced
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Prep your veggies: Start by gathering all your ingredients. Chop the bell peppers, red onion, and tomatoes, and dice the avocado.
  2. Mix it up: In a large mixing bowl, combine your black beans, corn, bell peppers, red onion, tomatoes, and cilantro. Gently stir everything together.
  3. Dress the party: In a small bowl, whisk together the lime juice and olive oil. Pour this dressing over the veggie mixture, adding salt and pepper to taste.
  4. Let it marinate: If you have time, let the Cowboy Caviar sit for about 30 minutes to allow the flavors to meld.
