- 1 red Bell Pepper, diced
- 1 green Bell Pepper, diced
- 1 small Red Onion, diced
- 1–2 medium Tomatoes, diced
- 1–2 ripe Avocados, diced
- 1/2 cup Cilantro, chopped
- 1–2 Limes, juiced
- 2 tablespoons Olive Oil
- Salt and Pepper, to taste
Instructions
- Prep your veggies: Start by gathering all your ingredients. Chop the bell peppers, red onion, and tomatoes, and dice the avocado.
- Mix it up: In a large mixing bowl, combine your black beans, corn, bell peppers, red onion, tomatoes, and cilantro. Gently stir everything together.
- Dress the party: In a small bowl, whisk together the lime juice and olive oil. Pour this dressing over the veggie mixture, adding salt and pepper to taste.
- Let it marinate: If you have time, let the Cowboy Caviar sit for about 30 minutes to allow the flavors to meld.
