Ingredients

  • 1 cup Corn, fresh or canned
  • 1 cup Cherry Tomatoes, halved
  • ½ Red Onion, diced
  • 1 Bell Pepper, diced
  • 1 Avocado, diced
  • ½ cup Cilantro, chopped
  • 2 Limes, juiced
  • Salt and Pepper, to taste

Instructions

  1. Prepare the Ingredients: Start by washing and prepping all your veggies. Cut the cherry tomatoes in half, dice the red onion and bell pepper, and chop the cilantro.
  2. Mixing the Base: In a large bowl, combine the black beans, corn, diced cherry tomatoes, red onion, and bell pepper.
  3. Add Avocado: Gently fold in the diced avocado.
  4. Whisk the Dressing: In a smaller bowl, combine the lime juice, salt, and pepper. Whisk until combined, then pour over the mixed ingredients.
  5. Toss and Taste: Carefully toss everything until the dressing coats the ingredients.
  6. Let it Marinate: Cover and chill in the fridge for 30 minutes.
