Description

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium red onion, finely chopped
  • 2 ripe avocados, diced
  • 1/4 cup fresh cilantro, chopped
  • 23 medium tomatoes, diced
  • Juice of 2 limes
  • 2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prep your ingredients: rinse and dice the veggies.
  2. Combine the beans and corn in a large bowl.
  3. Add the chopped veggies, mixing gently.
  4. Incorporate the avocados delicately.
  5. Mix the dressing in a small bowl and pour over the mixture.
  6. Chill in the refrigerator for 30-60 minutes.
  7. Serve with tortilla chips or fresh veggies.

Notes
