- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 medium red onion, finely chopped
- 2 ripe avocados, diced
- 1/4 cup fresh cilantro, chopped
- 2–3 medium tomatoes, diced
- Juice of 2 limes
- 2 teaspoons chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prep your ingredients: rinse and dice the veggies.
- Combine the beans and corn in a large bowl.
- Add the chopped veggies, mixing gently.
- Incorporate the avocados delicately.
- Mix the dressing in a small bowl and pour over the mixture.
- Chill in the refrigerator for 30-60 minutes.
- Serve with tortilla chips or fresh veggies.
Notes
Best enjoyed fresh, but can be made ahead. Add avocado before serving to prevent browning.
