Description

Ingredients

  • 1 can Black Beans, rinsed
  • 1 cup Corn, fresh or canned
  • 1 Red Bell Pepper, diced
  • 2 Tomatoes, diced
  • 1/2 Red Onion, diced
  • 1 Avocado, diced
  • 1/4 cup Cilantro, chopped
  • 2 tablespoons Lime Juice
  • 2 tablespoons Olive Oil
  • 1 Jalapeño, diced (optional)
  • Salt and Pepper, to taste

Instructions

  1. Gather all your ingredients together.
  2. Dice the red bell pepper, tomatoes, red onion, and jalapeño.
  3. Rinse the black beans and corn.
  4. Combine the black beans, corn, diced bell pepper, tomatoes, red onion, cilantro, and jalapeño in a large mixing bowl.
  5. Whisk together the lime juice, olive oil, salt, and pepper in a separate bowl.
  6. Pour the dressing over the vegetable mixture and toss gently.
  7. Taste and adjust seasoning as needed.
  8. Chill for about 30 minutes in the fridge.
  9. Serve with tortilla chips or as a side dish.

Notes

Allowing the dip to sit enhances the flavors. Add avocado right before serving to maintain freshness.
