Description

  • 1 can Pinto Beans, rinsed and drained
  • 1 cup Corn (fresh, frozen, or canned)
  • 1 cup Bell Peppers, diced
  • 1/2 cup Red Onion, diced
  • 1 Avocado, diced
  • 1 cup Cherry Tomatoes, halved
  • 1/4 cup fresh Cilantro, chopped
  • 1/4 cup Lime Juice
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Prepare the Beans: In a large mixing bowl, add the rinsed and drained black beans and pinto beans. Stir to combine.
  2. Add the Corn: Toss in the corn, ensuring it’s well mixed with the beans.
  3. Chop the Veggies: Dice the bell peppers, red onion, and cherry tomatoes into equal-sized pieces.
  4. Fresh Ingredients Come Together: Add the finely chopped cilantro and diced avocado into the mixing bowl.
  5. Dress It Up: In a separate bowl, whisk together lime juice, olive oil, salt, and pepper, then pour over the Cowboy Caviar mixture.
  6. Give it a Good Stir: Gently fold everything together without mashing the avocado.
