Description

Ingredients

  • 1 can Black Beans, rinsed and drained
  • 1 can Corn, drained
  • 1 cup Cherry Tomatoes, halved
  • 1 Red Bell Pepper, finely chopped
  • 1/2 Red Onion, finely chopped
  • 1/4 cup Fresh Cilantro, chopped
  • Juice from 2 Limes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder

Instructions

  1. Prep the Veggies: Gather all your fresh ingredients. Rinse and drain the black beans and corn in a colander. Chop the red onion, red bell pepper, and cilantro, halving the cherry tomatoes as you go.
  2. Mix It Up: In a large mixing bowl, combine the black beans, corn, cherry tomatoes, red bell pepper, red onion, and cilantro. Use a spatula to gently fold everything together.
  3. Dressing Time: In a separate small bowl, whisk together the lime juice, olive oil, salt, pepper, cumin, and chili powder.
  4. Combine Everything: Pour the dressing over the vegetable mixture and gently fold until well coated. Taste and adjust seasoning if needed.
  5. Let It Chill: Cover the bowl and let it chill in the fridge for at least 30 minutes.
  6. Serve It Up: Scoop the Cowboy Caviar into a serving bowl and garnish as desired.
