Description

A vibrant and flavorful dish bursting with fresh veggies, beans, and a zesty dressing, perfect for a dip, salad, or filling for tacos.


Ingredients

  • 1 can Black Beans, drained and rinsed
  • 1 cup Corn, frozen (thawed) or fresh
  • 1 cup Cherry Tomatoes, halved
  • 1 small Red Onion, finely chopped
  • 1 medium Green Bell Pepper, diced
  • 1 small bunch Cilantro, roughly chopped
  • Juice of 1 Lime, freshly squeezed
  • 2 tablespoons Olive Oil
  • 1 to 2 teaspoons Taco Seasoning
  • Salt & Pepper, to taste

Instructions

  1. Rinse the black beans under cold water in a fine-mesh sieve.
  2. Prepare the corn by slicing it off the cob and boiling it briefly if using fresh.
  3. Chop the cherry tomatoes, red onion, and green bell pepper into bite-sized pieces.
  4. Mix the rinsed black beans, corn, halved cherry tomatoes, and chopped veggies in a large bowl.
  5. Make the dressing by whisking together lime juice, olive oil, taco seasoning, salt, and pepper in a separate bowl.
  6. Dress the cowboy caviar mixture and toss gently to coat.
  7. Chill for at least 30 minutes in the refrigerator.
  8. Serve with crispy tortilla chips or use as a topping for tacos or burritos.

Notes

This dish can be made ahead of time; it tastes better after sitting for a few hours or overnight.
