Description

A vibrant and zesty Southwestern dish combining beans, corn, and fresh vegetables, perfect for gatherings or as a light meal.


Ingredients

  • 1 can Black Beans, rinsed and drained
  • 1 can or 1 cup fresh Corn
  • 1 cup Diced Tomatoes
  • 1 small Red Onion, diced
  • 12 Bell Peppers, diced
  • 1/4 cup Cilantro, chopped
  • 2 Limes, juiced
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste
  • Optional: Chili powder or cumin

Instructions

  1. Prep your ingredients by rinsing and draining the beans and corn.
  2. Chop and dice the red onion and bell peppers uniformly.
  3. Mix all ingredients in a large mixing bowl and gently toss to combine.
  4. Dress the mixture with lime juice, olive oil, salt, and pepper, then stir until well coated.
  5. Let it sit in the fridge for at least 30 minutes to meld flavors.
  6. Serve with tortilla chips or as a topping for tacos or grilled meats.
