Description

Deliciously fluffy Cinnamon Roll Muffins combine the warm flavors of cinnamon rolls with the convenience of muffins, perfect for cozy mornings.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 large egg
  • 1 cup milk
  • ⅓ cup unsalted butter (melted)
  • ½ cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon ground cinnamon (for filling)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.
  2. Mix the dry ingredients in a large mixing bowl: flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. Combine the wet ingredients in a separate bowl, whisking together melted butter, milk, egg, and vanilla extract.
  4. Combine the wet mixture with the dry ingredients, stirring gently until just combined.
  5. Prepare the filling by mixing together the brown sugar and additional cinnamon in a small bowl.
  6. Fill each muffin cup about ⅓ full with batter, then add a layer of the cinnamon-brown sugar mixture on top.
  7. Add more batter to fill the cups about ¾ full and swirl the filling gently through the batter.
  8. Bake for 18-20 minutes or until golden, and a toothpick inserted comes out clean.
  9. Cool for about 10 minutes, then whisk together powdered sugar and milk for glaze and drizzle over muffins.
