Description

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ cup powdered sugar
  • ½ cup cold unsalted butter, cubed
  • 1 large egg yolk
  • 1 cup heavy cream
  • 8 ounces semisweet chocolate, chopped
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 4 ounces white chocolate, chopped

Instructions

  1. Prepare the crust.
  2. Combine dry ingredients: In a large bowl, whisk together the flour, cocoa powder, and powdered sugar until there are no lumps.
  3. Incorporate the butter: Add the cold cubed butter and work it into the dry mixture until it resembles coarse crumbs.
  4. Add the egg yolk: Mix in using a fork until just combined.
  5. Chill: Shape the dough into a disk, wrap it, and refrigerate for about 30 minutes.
  6. Bake the crust: Preheat your oven to 350°F (175°C).
  7. Roll out the dough into a circle about 1/8-inch thick and transfer it to a tart pan.
  8. Pre-bake: Cover with parchment paper and fill with weights, bake for 15 minutes, then remove weights and bake for an additional 5-7 minutes.
  9. Make the filling: In a saucepan, heat the heavy cream until it simmers.
  10. Melt the chocolate: Pour the hot cream over the chopped chocolate and let sit for 2 minutes.
  11. Stir until smooth, then add sugar and vanilla extract.
  12. Assemble the tart: Pour the ganache into the cooled crust and chill for at least 2 hours.
