Ingredients
Dough

2 cups warm water (≤90°F/32°C)

1 cup sourdough starter discard (unfed)

6 tbsp brown sugar

4½ tsp active dry yeast (2 packets)

4 tsp salt

7–8 cups all-purpose flour

8 tbsp salted butter, melted
Water Bath

12 cups water

4 tbsp baking soda

2 tbsp dark brown sugar
Cinnamon Sugar Coating

2 cups granulated sugar

4 tbsp ground cinnamon

12–16 tbsp salted butter, melted
Instructions

Activate Yeast – In a large bowl, mix warm water, starter discard, brown sugar, and yeast. Let foam for 5–10 mins.

Make Dough – Add salt, melted butter, then 7 cups flour. Knead 8–10 mins, adding flour until smooth and slightly tacky.

Rise – Place dough in an oiled bowl, cover, and let rise 1 hour until doubled.

Shape – Punch down dough, divide into 4, roll into 1-inch ropes, cut into 1-inch pieces.

Boil – Preheat oven to 400°F (200°C). Boil water, baking soda, and dark brown sugar. Boil bites in batches 30 secs, remove with slotted spoon to parchment-lined trays.

Bake – Bake 12–15 mins until deep golden.

Coat – While hot, brush with melted butter, roll in cinnamon sugar. Serve warm!
