- 4 Chicken Thighs (bone-in, skin-on)
- 2 tablespoons Olive Oil
- 1 Onion, chopped
- 4 cloves Garlic, minced
- 1 Bell Pepper, diced
- 2 cups Chicken Broth (low-sodium)
- 1 cup Heavy Cream
- 1 cup Rice (long grain, jasmine or basmati)
- Salt, to taste
- Pepper, to taste
- Paprika, to taste
- Thyme, to taste
Instructions
- Prepare the chicken by seasoning with salt, pepper, and paprika, then sear in olive oil until golden brown.
- Sauté the onion in the same skillet until translucent, then add garlic and sauté.
- Mix in the diced bell peppers and cook until softened.
- Create the sauce by adding chicken broth and heavy cream, stirring to combine.
- Return the chicken to the pan, cover, and simmer until cooked through.
- Prepare the rice by rinsing, then cooking it in boiling water until tender.
- Combine the cooked rice with the chicken and sauce for serving.
Notes
Serve with a sprinkle of freshly chopped parsley or scallions and a side of salad or cornbread.
