It’s summer comfort in a bowl, with zero oven time and all the soul. Let your slow cooker work the magic while you kick back—this one’s as easy as it is elegant.


Ingredients

  • 1.5 lbs chicken breasts or thighs (boneless, skinless)

  • 2 large yellow onions, thinly sliced

  • 3 cups low-sodium beef or chicken broth

  • 2 tbsp balsamic vinegar

  • 1 tsp garlic powder

  • 1 tsp dried thyme

  • Salt & pepper to taste

  • 8 oz short pasta (rotini, penne, or shells)

  • 1 cup shredded Gruyère or Swiss cheese


Instructions

  • Layer & Cook
    Add onions, broth, vinegar, garlic powder, thyme, and chicken to your slow cooker. Season generously. Cook on LOW 6–7 hrs or HIGH 3–4 hrs.

  • Shred the Chicken
    Once tender, shred chicken right in the cooker. Stir well to coat with oniony broth.

  • Add Pasta & Cheese
    Cook pasta separately until just al dente. Drain and stir into the pot with shredded cheese until melty and glossy.

  • Serve It Up
    Spoon into bowls, top with more cheese, thyme, and pepper. Garlic bread = mandatory.

Notes

  • Beef broth = deeper flavor, chicken broth = lighter.

  • Add mushrooms with onions for umami magic.
