4 medium sweet potatoes, scrubbed and pierced

Salt & pepper, to taste

Roast the potatoes: Preheat oven to 400°F (200°C). Pierce potatoes with a fork and bake directly on the rack for 40–45 min, until soft.

Brown the beef: While they bake, cook ground beef in a skillet over medium heat for 5–7 min, breaking it apart. Drain excess fat if needed.

Make the sauce: Add tomato sauce, ketchup, mustard, Worcestershire, garlic powder, paprika, salt, and pepper. Stir well and simmer 5–10 min until thickened.

Assemble: Slice open each potato and gently fluff the insides with a fork. Spoon the sloppy joe mixture generously on top.
