Ingredients

1 cup Bisquick (or homemade mix: flour, baking powder, salt, butter/oil)

1 lb sausage, cooked & crumbled (pork, turkey, or chicken)

4 large eggs, beaten (room temperature)

1 cup shredded cheddar (or your favorite melty cheese)

Optional add-ins: sautéed onions, bell peppers, herbs, garlic powder, smoked paprika
Instructions

Prep oven & tin: Preheat oven to 350°F (175°C). Line muffin tin with paper liners or grease well.

Cook sausage: Brown sausage in a skillet until cooked through. Drain & cool slightly.

Mix batter: In a bowl, combine sausage, Bisquick, eggs, and cheese. Stir gently until just combined (do not overmix).

Fill cups: Scoop batter into 12 muffin cups, nearly to the top.

Bake: 18–22 minutes, until tops are golden and a toothpick comes out clean. Rotate pan halfway for even baking.
