Ingredients

  • Mixed Greens (e.g., Romaine, spinach, or arugula)
  • Black Beans (canned or cooked)
  • Corn (fresh, frozen, or canned)
  • Cherry Tomatoes (halved)
  • Avocado (diced)
  • Red Onion (thinly sliced)
  • Cilantro (fresh, chopped)
  • Lime Juice (freshly squeezed)
  • Olive Oil (extra virgin)
  • Feta Cheese (crumbled)
  • Chili Powder or Cumin

Instructions

  1. Prepare your ingredients by washing and prepping your mixed greens. Tear them into bite-sized pieces. Rinse the canned black beans and drain the corn.
  2. Dice the avocado, chop the cilantro, slice the red onion, and halve the cherry tomatoes.
  3. Assemble the salad by tossing in all your greens first, then layering on the black beans, corn, tomatoes, and avocado.
  4. Make the dressing by whisking together lime juice, olive oil, chili powder (or cumin), and a pinch of salt in a small bowl.
