Description

A light and refreshing cheesecake made with Greek yogurt and Jello, perfect for summer gatherings.


Ingredients

  • 1 ½ cups Greek yogurt (plain, unsweetened)
  • 1 package (3 oz) Jello (any color/flavor)
  • ⅓ cup honey (or maple syrup)
  • 1 cup cream cheese (softened)
  • 1 tsp vanilla extract
  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter (melted)
  • Fresh fruit or whipped cream for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs and melted butter in a mixing bowl.
  3. Press the mixture into the bottom of a 9-inch pie pan or tart pan and bake for 8-10 minutes until lightly golden. Let cool.
  4. Beat softened cream cheese until smooth, then add Greek yogurt, honey, vanilla, and Jello powder, mixing well.
  5. Gradually mix in boiling water to dissolve the Jello.
  6. Pour the Jello mixture into the cream cheese mixture and stir until combined. Pour over the cooled crust and refrigerate for at least 4-6 hours or overnight.
  7. Slice and garnish with fresh fruit or whipped cream before serving.
