Ingredients

4 ripe peaches, peeled & sliced (or thawed frozen)

1 cup fresh lemon juice (from 4–6 lemons)

½–¾ cup honey or sugar (start with less, sweeten to taste)

5 cups cold water (1 cup for simmering, 4 for mixing)

Ice, lemon slices & mint for serving (optional)
Instructions

Simmer Peaches (10 mins): In a saucepan, combine peaches & 1 cup water. Simmer until soft.

Blend Smooth (1 min): Blend peaches & liquid until smooth. Strain for a silky finish, or leave rustic.

Sweeten (2 mins): Stir sweetener into warm purée. Taste and adjust!

Mix (2 mins): In a large pitcher, combine peach purée, lemon juice, and 4 cups cold water.

Chill (2 hrs): Refrigerate until cold. Or serve right over ice if you’re impatient like me!
