1½ lbs chicken breast, pounded even

2 tbsp olive oil

1 tsp kosher salt

½ tsp black pepper

½ tsp garlic powder

2½ cups reduced-sodium chicken broth

1¼ cups long-grain white rice

12 oz frozen broccoli, thawed & chopped

2 cups shredded sharp cheddar

Splash of milk or cream (optional)
Instructions
1️⃣ Sear the Chicken — Season chicken with salt, pepper, and garlic powder. Heat oil in a large pot over medium-high. Sear chicken 3–4 mins per side until golden. Remove to a plate.
2️⃣ Cook the Rice — Pour broth into the same pot, scraping up bits. Stir in rice, bring to a simmer. Cover, reduce heat to low, cook 10 mins.
3️⃣ Add Broccoli & Chicken — Stir in broccoli, nestle chicken on top. Cover and cook 10–12 mins until chicken is 165°F and rice is tender.
4️⃣ Get Cheesy — Remove chicken, stir cheese into rice until creamy. Add splash of cream if you like. Slice chicken, return to pot. Rest 5 mins, serve warm and melty!
