Ingredients

  • 2 lbs of beef chuck roast
  • 4 medium-sized potatoes (Russet or Yukon Gold)
  • 2 tablespoons of olive oil
  • 1 large onion, diced
  • 4 cloves of garlic, minced
  • 2 cups beef broth
  • 1 tablespoon of fresh thyme (or 1 teaspoon dried)
  • Salt and pepper to taste
  • 1 tablespoon of Worcestershire sauce

Instructions

  1. Prep the meat by trimming any excess fat off the beef chuck roast. Pat it dry with a paper towel, season generously with salt and pepper on all sides.
  2. Sear the beef by heating olive oil in a large pot over medium-high heat. Add the roast and sear for about 4-5 minutes on each side until browned.
  3. Remove the meat and set aside. In the same pot, sauté the diced onion for about 5 minutes until translucent. Scrape brown bits from the pot.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. Pour in the beef broth, add Worcestershire sauce, thyme, and seasonings. Bring to a simmer.
  6. Return the seared roast to the pot, cover, and reduce heat to low. Simmer for about 180 minutes until fork-tender.
  7. Prep the potatoes by chopping them into equal-sized chunks, around 1-2 inches.
  8. Add the potatoes to the pot after 3 hours, bringing it to a gentle boil and cooking for about 20-25 minutes until fork-tender.
  9. Shred the beef into bite-sized pieces and add it back into the pot with the potatoes.
  10. Taste and adjust for seasoning as needed. Optionally thicken the broth using cornstarch mixed with water.
  11. Serve warm in bowls, enjoying it together with loved ones.

Notes

For added flavor, serve with crusty bread and a side salad. Experiment with variations like adding mushrooms or making a vegetarian version.
