  • 1 tsp salt + ½ tsp black pepper

  • ¾ cup all-purpose flour (or GF blend)

  • 4 tbsp olive oil

  • 4 tbsp unsalted butter

  • 6 garlic cloves, minced

  • 2 cups chicken stock

  • 2 cups heavy cream (or half-and-half)

  • 1 cup grated fresh Parmesan

  • 2 tsp chili flakes (adjust to taste)

  • ½ tsp dried oregano + ½ tsp dried thyme

  • ⅔ cup sun-dried tomatoes, chopped (oil-packed)

  • 2 tbsp fresh basil, torn


Instructions

1️⃣ Prep Chicken: Season cutlets well. Dredge in flour, shaking off excess.

2️⃣ Sear: In a large Dutch oven, heat 2 tbsp oil over medium-high. Sear chicken in batches, 3–4 mins per side. Transfer to a plate.

3️⃣ Build Sauce: Reduce heat. Melt butter in the same pan, sauté garlic 1 min. Pour in stock, scrape browned bits. Bring to a simmer.

4️⃣ Creamy Magic: Stir in cream, Parmesan, chili flakes, oregano, thyme, and sun-dried tomatoes. Simmer 5–7 mins until thick enough to coat a spoon.

5️⃣ Finish: Return chicken + juices to the sauce. Simmer 5 mins. Remove from heat, tear basil over top. Rest 5 mins.
