Ingredients

  • 2 large Potatoes (Yukon Gold or Russet)
  • 2 tablespoons Olive Oil
  • 2 tablespoons Taco Seasoning
  • 1 pound Ground Beef or Turkey (or plant-based alternative)
  • 1 can Black Beans
  • 1 cup Corn (frozen or fresh)
  • 1 cup Shredded Cheese (Cheddar or Mexican Blend)
  • 1/2 cup Sour Cream or Greek Yogurt
  • 1/4 cup Fresh Cilantro
  • 1/4 cup Sliced Jalapeños

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prep the potatoes by washing and dicing them into bite-sized chunks.
  3. Season the potatoes with olive oil, taco seasoning, and salt.
  4. Roast the potatoes on a baking sheet for 25-30 minutes, flipping halfway.
  5. Cook your protein in a skillet over medium heat with a splash of olive oil.
  6. Warm the corn and beans in the skillet until heated through.
  7. Assemble the bowls with a layer of crispy potatoes.
  8. Top with cooked meat, beans, corn, cheese, sour cream, cilantro, and jalapeños.
