Ingredients

  • 8 oz whole wheat penne (or regular penne, bowties, spaghetti)

  • 1 can (5–6 oz) tuna in water, drained

  • 1 tbsp olive oil

  • Juice and zest of 1 lemon

  • ¼ cup fresh basil, chopped

  • 2 tbsp capers (optional)

  • 2 cups baby spinach

  • Salt and black pepper, to taste

  • Optional: ½ cup roasted cherry tomatoes or ½ cup peas


Instructions

1. Cook Pasta & Wilt Spinach

  • Boil a large pot of salted water.

  • Add penne and cook per package directions.

  • In the last 2 minutes, toss in spinach to wilt.

  • Drain, reserving ¼ cup pasta water.

2. Prepare Flavor Base

  • In a large mixing bowl, combine drained tuna, olive oil, lemon juice, lemon zest, basil, and capers (if using).

  • Season generously with salt and freshly cracked black pepper.

  • Use a fork to break up tuna and mix everything.

3. Toss Everything Together

  • Add hot pasta and spinach to the tuna mixture.

  • Toss thoroughly so every piece is coated.

  • Add reserved pasta water if needed to loosen sauce.

  • Fold in optional roasted tomatoes or peas.

4. Serve Immediately

  • Plate in wide, shallow bowls.

  • Garnish with extra basil, lemon zest, and cracked black pepper.

  • Optional: drizzle with high-quality olive oil.
