  • 2 lbs Italian or chicken sausage (sliced or whole)

  • 4 large sweet potatoes, peeled & cubed (1-inch)

  • ½ cup honey (or maple syrup)

  • 6 cloves garlic, minced

  • 4 tbsp soy sauce (or tamari for GF)

  • 2 tbsp olive oil (or avocado oil)

  • 2 tsp smoked or sweet paprika

  • Salt & black pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  • Preheat oven to 425°F (220°C). Line a sheet pan with parchment.

  • Whisk together honey, garlic, soy sauce, oil, paprika, and black pepper.

  • Place sausage and sweet potatoes on the pan. Pour sauce over and toss until evenly coated.

  • Spread into a single layer (use 2 pans if crowded).

  • Roast 25–30 min, stirring halfway, until potatoes are tender and sausage is browned.

  • Garnish with parsley. Serve warm straight from the pan or plated with greens.
