  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 cup Bell Peppers, diced
  • 1 can (14 oz) Canned Diced Tomatoes
  • 1 can (15 oz) Canned Beans, drained
  • 1 cup Frozen Mixed Veggies
  • 1 cup Beef Broth
  • 1 cup Cheddar Cheese, shredded
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Paprika
  • 1 tsp Italian Herbs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a large skillet over medium heat for about 5-7 minutes.
  3. Add the diced onion and minced garlic; sauté until fragrant.
  4. Toss in the diced bell peppers and sauté for another 3-4 minutes.
  5. Mix in the canned diced tomatoes, drained beans, and frozen mixed veggies.
  6. Pour in the beef broth and stir to combine.
  7. Season with salt, pepper, paprika, and Italian herbs.
  8. Transfer the mixture to a greased baking dish.
  9. Sprinkle cheddar cheese over the top.
  10. Bake in the oven for about 25-30 minutes until the cheese is bubbly and golden.
  11. Let it rest for about 10 minutes before serving.
