- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 cup Bell Peppers, diced
- 1 can (14 oz) Canned Diced Tomatoes
- 1 can (15 oz) Canned Beans, drained
- 1 cup Frozen Mixed Veggies
- 1 cup Beef Broth
- 1 cup Cheddar Cheese, shredded
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Paprika
- 1 tsp Italian Herbs
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground beef in a large skillet over medium heat for about 5-7 minutes.
- Add the diced onion and minced garlic; sauté until fragrant.
- Toss in the diced bell peppers and sauté for another 3-4 minutes.
- Mix in the canned diced tomatoes, drained beans, and frozen mixed veggies.
- Pour in the beef broth and stir to combine.
- Season with salt, pepper, paprika, and Italian herbs.
- Transfer the mixture to a greased baking dish.
- Sprinkle cheddar cheese over the top.
- Bake in the oven for about 25-30 minutes until the cheese is bubbly and golden.
- Let it rest for about 10 minutes before serving.
