- 1 cup rolled oats
- 1 cup whole wheat flour
- 1 cup grated carrots
- 2 ripe bananas, mashed
- 1/3 cup honey or maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup chopped nuts (walnuts or pecans)
- 1/2 cup raisins or dried cranberries
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a baking sheet lined with parchment paper.
- Mix the rolled oats, flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a large bowl.
- Mash the ripe bananas until smooth.
- Combine the mashed bananas with honey (or maple syrup) and fold in the grated carrots.
- Blend the banana-carrot mixture with the dry ingredients until just combined.
- Mix in chopped nuts and raisins/dried cranberries.
- Scoop mounds of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 12-15 minutes until golden brown.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
These cookies can be made gluten-free by using gluten-free flour and certified gluten-free oats. They can also be frozen for later enjoyment.
