Greek Yogurt Protein Bark

  • Author: OliviaBennett
  • Total Time: 3 hours

Description

One hot summer day, a melted ice cream disaster sparked a happy kitchen accident—and this bark was born! Creamy Greek yogurt, rich peanut butter, and a chocolatey crunch make this the perfect grab-and-go snack or post-workout treat. Easy to make, fun to crack, and full of flavor, it’s your freezer’s new favorite tenant.

Ingredients

Scale
  • 1 cup plain full-fat Greek yogurt

  • ¾ cup peanut butter (warm slightly for easy mixing)

  • ¼ cup vanilla protein powder (optional)

  • 12 tbsp maple syrup or honey

  • ¼ tsp vanilla extract

  • 1 cup dark chocolate chips, melted

  • Flaked sea salt (optional, but magical)

Instructions

  1. Mix the Base: In a bowl, combine yogurt, peanut butter, protein powder, sweetener, and vanilla. Stir until smooth.

  2. Spread It Out: Line a baking sheet with parchment. Spread mixture into a ½-inch thick rectangle.

  3. Top with Chocolate: Pour melted chocolate over yogurt layer. Swirl gently and sprinkle sea salt on top.

  4. Freeze: Place tray in freezer for 2–3 hours until solid.

  5. Break and Store: Lift parchment and break bark into pieces. Store in a freezer-safe bag for up to 2 weeks.

Notes

  • Use full-fat yogurt to avoid ice crystals.

  • Add 1 tsp coconut oil to chocolate for smoother texture.

  • Customize with fruit, nuts, or seeds for added flair.
