  • 1/4 cup Pure Maple Syrup
  • 2 tablespoons Dijon Mustard
  • 2 tablespoons Olive Oil
  • 2 medium-sized Sweet Potatoes

  • Salt and Pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces. Toss in a bowl with olive oil, salt, and pepper, then lay on a lined baking sheet.
