Packed with almonds, cacao, and a touch of coconut, they’re the ultimate fuel for busy days, workouts, or midnight cravings. No oven, no fuss—just five minutes, a food processor, and pure snacking joy. They’re proof that healthy eating can be both nourishing and indulgent.


Ingredients

  • 1½ cups raw almonds (or sunflower seeds for nut-free)

  • 1 cup medjool dates, pitted (soak 10 min if dry)

  • ⅔ cup desiccated coconut + extra for rolling

  • 4 tbsp cacao or unsweetened cocoa powder

  • 2 tsp vanilla extract

  • Pinch of sea salt

  • 2 tbsp vanilla protein powder (optional)


Instructions

  1. Grind Almonds: Add almonds to a food processor and pulse into a coarse meal.

  2. Add Everything Else: Toss in dates, coconut, cacao, vanilla, salt, and protein powder.

  3. Blend: Process until the mixture clumps together. If too dry, add 1 tsp of water or maple syrup.

  4. Roll: Scoop 1 tbsp of mixture, roll firmly into balls, and coat in extra coconut.

  5. Chill: Refrigerate 10–15 minutes to firm up.

Notes

  • Too crumbly? Add a touch of oil or maple syrup.

  • Too sticky? Add a spoonful of oats or protein powder.

  • Store airtight in the fridge for up to 2 weeks, or freeze for 3 months.
