Ingredients

1 cup all-purpose flour

1 tsp salt

1 tsp baking powder

2 tbsp sugar

½ tsp cinnamon

2 eggs (room temp)

⅓ cup milk (any kind)

1 tbsp melted butter

1¼ cups diced fresh peaches (patted dry)

Oil for frying (canola or vegetable)

Granulated sugar for coating

or Powdered Sugar Glaze: 1 cup powdered sugar + milk (start with 1 tbsp)
Instructions

Prep: Heat 2” oil in a pan to 350°F. Line a tray with paper towels.

Dry Mix: In a bowl, whisk flour, salt, baking powder, sugar, cinnamon.

Wet Mix: In another bowl, whisk eggs, milk, and butter.

Combine: Fold wet into dry—don’t overmix! Gently fold in diced peaches.

Fry: Drop heaping tablespoons of batter into hot oil. Fry 2–3 mins per side, golden and puffed. Drain on paper towels.

Finish: While warm, roll in sugar or drizzle with glaze. Serve immediately!
