Description

A delightful dish of crispy chicken breasts coated in Parmesan and served with a rich garlic sauce, perfect for weeknight dinners.


Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 eggs, beaten
  • 6 cloves garlic, minced
  • 4 tablespoons butter
  • Fresh parsley (for garnish)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place the chicken breasts between two pieces of plastic wrap and gently pound them to about 1/2 inch thick.
  3. In one bowl, beat the eggs until frothy. In a second bowl, combine the grated Parmesan and panko breadcrumbs with a pinch of salt and pepper.
  4. Working with one piece of chicken at a time, dip it into the egg wash, then dredge it into the breading mixture.
  5. Drizzle olive oil over the breaded chicken and arrange on a parchment-lined baking sheet.
  6. Bake for about 20-25 minutes until golden brown and fully cooked, reaching an internal temperature of 165°F (74°C).
  7. While the chicken is baking, melt the butter in a skillet over medium heat, add the minced garlic, and sauté for about 30 seconds.
  8. Stir in a pinch of salt, pepper, and a splash of lemon juice, and let it simmer for a minute.
  9. Plate the chicken drizzled with the garlic sauce and garnish with fresh parsley.
