  • 2 garlic cloves, minced

  • ½ cup heavy cream (or coconut milk for dairy-free)

  • ½ cup vegetable broth

  • ½ tsp dried oregano

  • 9 oz cheese tortellini (refrigerated or frozen)

  • 2 cups baby spinach

  • ½ cup fresh basil, chopped

  • ½ cup grated Parmesan (or vegan alternative)

  • Olive oil, for sautéing

  • Salt & pepper to taste


Instructions

  1. Sauté: Heat olive oil in a large skillet over medium heat. Add garlic and cook 30 seconds until fragrant.

  2. Simmer: Add tomatoes (with juice), cream, broth, oregano, and tortellini. Stir and simmer gently for 7–9 minutes, stirring occasionally.

  3. Wilt Greens: Reduce heat. Add spinach and most of the basil, stirring until wilted (1–2 mins).

  4. Cheesy Finish: Stir in Parmesan until smooth and creamy. Remove from heat for best texture.

  5. Serve: Top with extra basil and cheese. Add a drizzle of olive oil or red pepper flakes if desired.
