1 medium head green cabbage

4 oz smoked bacon, chopped

¾ cup heavy cream

¾ cup grated Gruyère cheese

½ tsp fresh thyme (optional)

1 tsp butter (optional, for searing boost)
Instructions
1️⃣ Preheat & Prep
Preheat oven to 400°F (200°C).
Lightly grease a cast-iron skillet or baking dish.
Cut cabbage:

Slice in half through the core

Cut each half into wedges (keep core intact to hold them together)
2️⃣ Crisp the Bacon
In your skillet over medium heat:
Cook chopped bacon until lightly crisp and fat is rendered.
Remove bacon to paper towel.
Leave about 1 teaspoon bacon fat in the pan.
(That fat = flavor foundation.)
3️⃣ Sear the Cabbage (Don’t Skip This!)
Place cabbage wedges cut-side down in the skillet.
