Ingredients

  • 2 cups (450g) unsalted butter, softened

  • 2 cups (400g) sugar

  • 2 tsp vanilla extract

  • ½ tsp almond extract (optional, for depth)

  • 4 large eggs, room temp

  • 5 cups (600g) all-purpose flour

  • 2 tsp baking powder

  • 1 tsp salt

  • 2 cups (240g) dried cranberries

  • 1 cup (170g) white chocolate chips (or chunks)

  • Zest of 2 oranges


Instructions

  • Preheat oven to 350°F (175°C). Line trays with parchment.

  • Cream butter & sugar until pale and fluffy (2–3 min).

  • Add eggs one at a time, then mix in vanilla, almond extract, and zest.

  • Whisk dry ingredients (flour, baking powder, salt) in a separate bowl.

  • Combine dry with wet in three parts, mixing gently until just blended.

  • Fold in cranberries and white chocolate.

  • Scoop dough into balls (1 tbsp each), place 2 inches apart.

  • Bake 12–15 min, until edges are golden and centers slightly soft.

  • Cool on sheet 5 min, then transfer to rack.

Notes

  • Add 1 cup chopped pecans or walnuts for crunch.

  • Swap white chocolate for dark for a richer flavor.

  • Try a triple-citrus zest (orange, lemon, lime).

  • Chill dough 15 min before baking for thicker cookies.
