Ingredients

  • 2 cups cooked chicken breast
  • 1 large apple (preferably Granny Smith or Fuji)
  • 1/2 cup celery, chopped
  • 1/4 cup red onion, finely diced
  • 1/2 cup Greek yogurt (or mayonnaise)
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Optional: 1/4 cup walnuts or pecans, chopped

Instructions

  1. Prepare the chicken by shredding or cubing it into bite-sized pieces.
  2. Chop the celery and red onion, and slice the apple while squeezing lemon juice over it.
  3. Mix the dressing by combining Greek yogurt (or mayo), Dijon mustard, and lemon juice in a bowl.
  4. Assemble the salad by combining chicken, celery, red onion, and apple, and then pouring the dressing over it.
  5. Taste and adjust seasoning with salt and pepper.
  6. Chill the salad for about 30 minutes to meld flavors.

Notes

Serve on a bed of greens, in a sandwich, or with crackers. Feel free to add dried cranberries or grapes for additional sweetness.
