Chicken & Potato Bowl with Tzatziki


Ingredients

For the Chicken & Potatoes

  • 2 cups baby or Yukon gold potatoes, cubed

  • 2 tbsp olive oil

  • Salt and freshly cracked black pepper, to taste

  • 2 chicken breasts or thighs, sliced

  • 1 tsp paprika (smoked or sweet)

  • ½ tsp ground cumin

  • ½ tsp garlic powder

For the Cucumber Salad

  • 1 cup diced cucumber

  • ½ cup cherry tomatoes, halved

  • 2 tbsp red onion, finely chopped

  • 1 tbsp lemon juice

  • 1 tbsp olive oil

  • Salt & pepper, to taste

For the Tzatziki

  • ½ cup full-fat Greek yogurt

  • ¼ cup grated cucumber, squeezed very dry

  • 1 garlic clove, minced

  • 1 tsp lemon juice

  • 1 tsp olive oil

  • Salt, to taste

Notes

  • Space potatoes well for maximum crispiness

  • Chicken thighs stay juicier, but breasts work great when sliced evenly

  • Make tzatziki ahead for best flavor
