Ingredients
For the Chicken & Potatoes

2 cups baby or Yukon gold potatoes, cubed

1 tsp paprika (smoked or sweet)

½ tsp garlic powder
For the Cucumber Salad

1 cup diced cucumber

½ cup cherry tomatoes, halved

2 tbsp red onion, finely chopped

1 tbsp lemon juice
-
1 tbsp olive oil

Salt & pepper, to taste
For the Tzatziki

½ cup full-fat Greek yogurt
-
¼ cup grated cucumber, squeezed very dry

1 garlic clove, minced
-
1 tsp lemon juice

1 tsp olive oil

Notes

Space potatoes well for maximum crispiness

Chicken thighs stay juicier, but breasts work great when sliced evenly
- Make tzatziki ahead for best flavor
