  • 1 ¼ cups all-purpose flour

  • ½ cup cold unsalted butter, cubed

  • 34 tbsp ice water

  • 3 ripe pears (Bosc or Anjou, thinly sliced)

  • ¼ cup brown sugar

  • 1 tsp chai spice mix (cinnamon, ginger, cardamom, cloves, black pepper)

  • 1 tbsp flour (for filling)

  • 1 egg (for wash)

  • 1 tbsp coarse sugar

  • Honey or maple syrup, for drizzle

Tip: Freeze butter cubes for 10 minutes—flakier crust guaranteed!


Instructions

  1. Make the dough: Blend flour, salt, and butter until crumbly. Add ice water gradually until dough clumps. Wrap, chill 30 mins.

  2. Prep pears: Toss slices with brown sugar, spices, and flour. Rest 10 mins to release juices.

  3. Roll & fill: Roll dough into a rough 12” circle. Layer pears in center, leaving 2” border. Fold edges inward, pleating naturally.

  4. Bake: Brush crust with egg wash, sprinkle coarse sugar. Bake at 400°F (200°C) for 35–40 mins until golden and bubbling.

  5. Finish: Cool 15 mins, drizzle honey or maple syrup. Serve with whipped cream or ice cream.
