All the cozy spice and sweetness of carrot cake in a soft, chewy, no-bake bite — ready in 15 minutes, no oven required! Perfect for breakfast on the run, a 3 PM pick-me-up, or a light dessert that still feels indulgent.


Ingredients

  • 1 cup rolled oats (GF if needed)

  • ½ cup shredded fresh carrot

  • ½ cup unsweetened shredded coconut

  • ¼ cup almond butter (or other nut/seed butter)

  • ¼ cup pure maple syrup

  • 1 tsp cinnamon

  • ½ tsp ground ginger

  • Pinch of salt

Maple Glaze

  • ¼ cup powdered sugar

  • 1 tbsp maple syrup

  • 12 tsp milk (any)


Instructions

  1. Mix Dough – In a bowl, combine oats, carrot, coconut, almond butter, maple syrup, cinnamon, ginger, and salt. Stir or knead until sticky and uniform. If dry, add 1 tsp maple syrup; if wet, sprinkle more oats.

  2. Roll Bites – Scoop 1 tbsp portions and roll into 1-inch balls. Place on parchment-lined tray. Chill at least 30 min.

  3. Glaze – Whisk powdered sugar, maple syrup, and milk until drizzly. Adjust thickness if needed.

  4. Finish – Drizzle glaze over chilled bites. Let set 5 min before enjoying.

Serving Ideas
Enjoy straight from the fridge, with chai or coffee, or as a lunchbox treat.

  • Add chopped walnuts or pecans for crunch.

  • Stir in raisins or dried pineapple for bursts of sweetness.
