Caprese Chicken Skillet

Ingredients

  • 2 boneless, skinless chicken breasts

  • Salt & black pepper, to taste

  • Garlic powder, to taste

  • 1 tbsp olive oil

  • 1 cup cherry or grape tomatoes, halved

  • 4 slices fresh mozzarella (about 4 oz)

  • Fresh basil leaves, torn

  • 2 tbsp balsamic glaze


Instructions

  1. Season Chicken
    Pat chicken dry. Season both sides with salt, pepper, and garlic powder.

  2. Sear Chicken
    Heat olive oil in a large skillet over medium-high heat.
    Add chicken and cook 4–5 minutes per side until golden and cooked through (internal temp 165°F).
    Remove chicken to a plate.

  3. Cook Tomatoes
    In the same skillet, reduce heat to medium.
    Add tomatoes and cook 2–3 minutes until softened and blistered, scraping up browned bits.

  4. Melt Cheese
    Return chicken to the skillet.
    Top each breast with mozzarella slices.
    Cover and cook 1–2 minutes until cheese is melted.

  5. Finish & Serve
    Remove from heat.
    Top with fresh basil and drizzle with balsamic glaze.
    Serve immediately.

Notes

  • Pound thick chicken breasts to even thickness for quicker cooking

  • Cover the pan tightly to help the cheese melt

  • Broil 1 minute if cheese needs extra melting (watch closely)
