Asian Crockpot Orange Chicken

Description

A comforting Asian dish featuring juicy chicken thighs coated in a tangy orange glaze, all cooked effortlessly in a crockpot.


Ingredients

  • 2 lbs Chicken Thighs
  • 1 cup Fresh Orange Juice
  • 1/4 cup Soy Sauce
  • 1/4 cup Honey
  • 3 cloves Garlic, minced
  • 1 tablespoon Fresh Ginger, grated
  • 2 tablespoons Cornstarch
  • 1 tablespoon Sesame Oil
  • Salt & Pepper, to taste

Instructions

  1. Trim any excess fat off your chicken thighs.
  2. Pat the chicken dry with paper towels.
  3. In a separate bowl, whisk together the fresh orange juice, soy sauce, honey, minced garlic, and grated ginger.
  4. Place the chicken thighs at the bottom of your crockpot.
  5. Pour the orange sauce over the chicken.
  6. Cover the crockpot and set it to low for 6-8 hours or high for 3-4 hours.
  7. About 30 minutes before serving, make a cornstarch slurry with a tablespoon of water.
  8. Stir the slurry into the crockpot to thicken the sauce.
  9. When the chicken is done, shred it in the pot with two forks and serve hot over rice or with steamed veggies.

Notes

For a crispy variation, coat the chicken in cornstarch and pan-fry before adding to the crockpot. Add crushed red pepper for a spicy kick.
